The Best Pumpkin Recipes


Before November is over, I want to share my favorite pumpkin recipes! After all, one of the best things about autumn is the delicious pumpkin treats.

My boyfriend and I started baking with pumpkin in August! (We couldn't wait another month). The first thing we made was pumpkin chocolate chip muffins. I searched Pinterest for the best recipe and found a great one that we've made a couple of times. These are great for work or school. They are quick to make & delicious!

  • 1¾ cups flour
  • 1 cup sugar
  • ½ cup brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • 2 large eggs
  • 1 (15 oz) can pure pumpkin purée
  • ½ cup melted coconut oil
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • Chocolate chips (add as many as you'd like)


  • Preheat oven to 375° F. Line a muffin pan with paper liners.
  • In a medium bowl, add the flour, sugar, brown sugar, baking soda, baking powder, salt, and spices. Whisk to combine.
  • In a small bowl, add the eggs, pumpkin purée, coconut oil, milk, and vanilla extract. Whisk to combine. Pour the wet mixture into the dry ingredients and fold to combine. The batter will be thick. Add chocolate chips! :)
  • Using an ice cream scoop, scoop the batter into the prepared muffin pan.
  • Bake for 22-24 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let cool for at least 5 minutes before removing the muffins from the pan.

My grandma makes the best pumpkin chocolate chip cookies, so I asked her for the recipe! I made these for Thanksgiving with Travis! They are moist, quick, & tasty!!

  • ½ cup butter
  • 1 ½ cups sugar
  • 1 egg
  • 1 cup cooked canned pumpkin
  • 1 t vanilla
  • 2 ½ cups flour
  • 1 t baking powder
  • 1 t baking soda
  • ½ t. salt
  • ½ t nutmeg
  • 1 t cinnamon
  • 1 cup dark chocolate chips


  • Cream butter and sugar together; beat in egg, pumpkin and vanilla. Gradually add the dry ingredients, which have already been measured in a separate bowl. Add chocolate chips. Mix well and refrigerate, a few hours or over night if possible.
  • Pre-heat oven to 350°. Use parchment paper on cookie sheets for easier clean up. Use a medium cookie or ice cream scoop and place the dough on the cookie sheet.
  • Bake 15 minutes on medium rack and about 5 minutes more on the upper rack until lightly browned; let cool about 5 minutes before moving them to a wire rack to cool. Store them in a tin or plastic container to retain moisture.
